Surprise your favorite cookie monster with these peanut butter-oatmeal lovelies bursting with vanilla chips and dried cranberries. Lots of star ingredients make for one deliciously unique cookie.

I made these cookies with my kids, but instead of the cranberries and vanilla chips, we substituted peanut butter chips and butterscotch chips! They were so good they were gone in a few short days! So, the kids thought we needed to make more, but it's so hot here I didn't want to keep the oven on long, so we made up the dough and put it in a greased 9x13 pan and we made them into bars! They were even better, soft and chewy like a cookie but thicker and more filling! YUMMY!! Love this recipe. (fyi- I baked the bars at the same temp for 30-35 min, until golden)

I made this recipe the other day and loved it. I actually took out the vanilla and used a good dose of cinnamon. Everyone at work loved them! They are super-moist too!
