I have been searching for something quick and healthy but not too heavy and this was perfect! Even moreso because my husband made it for us :-) Kids would want a thicker sauce but if you are being health conscious, I really think this is a definite keeper. Looking forward to sharing this recipe.

really enjoyed this recipe. It is so easy and I usually have everything in my pantry for this. My husband is a meat eater, so I changed it a bit from "minstrone" to add ground turkey to it. I also add Italian seasoning to it and I know this sounds funny, but a can of V8 because I like it a little soupier. :-)

This meal was delicious and very different! I added 2 cloves fresh garlic and grated Parmesan on top but otherwise followed the recipe exactly. What a healthy meal...reheats well, too! Definitely worth a try! This recipe is a keeper!

FANTASTIC!!!! With grated parmesan on top made this dish taste just like homemade minestrone from our favorite local authentic Italian restaurant. I left out the chili sauce (not a fan) used 1/2 kidney & 1/2 pinto beans and seasoned the peppers and zucchini with salt and pepper as I sauteed them. Addt'l salt was not needed as the recipe stated.

I used the ingredients on hand (love this website for this), so had to substitute the following: canned tomatoes with fresh tomatoes sprinkled with dried basil and garlic powder. Turned out to be tasty, however, I think I used wrong chili sauce - it was way too spicy for me. Next time will either use a different sauce or just a teaspoon of mine. My husband added lots of cheese into his plate and leftovers were good for next two days. Overal - easy to make and satisfying dish.

Wow, what a hit this was! Entails a bit of shopping but I already had the multi colored bell peppers on hand. What a great what to use them before they went bad! I served this with Pillsbury Crusty French Dinner Rolls and oh my, did my family enjoy!! This will become at 'least' a once a month dinner for us. The only thing I would consider; wait until you help your plate before using salt. I left it out of the recipe and let everyone salt their own.

This recipe is truly delicious, nutritious and quick and easy. I substituted baby leeks for the zuccini and pinto beans for the kidney beans and used whole wheat 4cheese tortellini. I love it as you have 4 of the food groups (grains, vegetables, dairy & protein) rolled into one meal!
