I'm sure I used more orange peel, mint and orange juice than the recipe required. The only thing I measured was the sugar and the cornstarch. I kind of over cooked it which I think might be a good idea since the melons produce a lot of water after cutting them up. This might have coated the melon chunks better.
Offhand, I'm not sure I've ever had a better tasting salad of this nature.
