Awesome, thank you for posting. I prefer fresh poatoes over Box. Broth to cook potatoes is an interesting change. I also use vegetable broth due to a vegetarian "in House", but this dish is just great with regular left over mashed potatoes from scratch also. A definite comfort food !

I love this, but I used leftover mashed potatoes (made extra in original preparation of mashed potatoes) and it was wonderful! Another time, I substituted vegetable broth for the chicken broth (one of the family is vegetarian) and it worked wonderfully. You could substitute other cheeses depending on what you have on hand or what you like. Easy and great!

This is awesome but instead of parmesan, I used cheddar. Makes it more cheesier. Also, substituted a bag of frozen diced potatoes.

I made this recipe for Xmas dinner this year. I would not normally make a dish without trying it out on my own first, however, this was easy to make and a crowd pleaser. I've already shared the recipe w/two of my family members. I highly recommend this dish.
