I have been using a version of this recipe for over 20 years. When I couldn't find the original recipe, (we moved and it got lost,) I found this online. The original called for a package of mixed veggies instead of the broccoli and carrots. I'm going to try this updated version tonight.!

Hmmm... Not sure if I did something wrong, but there was a LOT of water left at the end. The noodles and veggies were cooked through, but the sauce was so runny, that it left it low on flavor. I even added 1/2 less water than called for cause I was worried it would do that...

I added a can of chili ready tomatoes and green chilis for a southwestern twist - turned out great! Served with tortilla strips I baked in the convection oven and guac. Ole!!

My family wasn't crazy about the broccoli in this recipe - not that they don't like broccoli as a rule - so I added about 1/2 cup of chopped green pepper, and 1 can whole kernel corn (frozen would work just as well); and I omited half the water and added 1 can of tomato soup and 1 can of italian diced tomatoes. This, they loved!

I didn''t serve this dish right away, so the pasta absorbed most of the water and it was more like a casserole than a soup. However, we all enjoyed it. NO LEFTOVERS!!
