This has been our traditional Easter dessert for many years. In the past I've made two just so everyone could have two servings.

This was a great light dessert after a big meal. The meringue crust is very fragile so handle carefully. I might make 1-1/2 times the lemon filling next time as it seemed like it could use more filling. But overall it was a big hit!
