cups Gold Medal® all-purpose flour

cup sugar

tablespoon grated lemon peel

teaspoons baking powder
1/4
teaspoon salt
1/3
cup butter or margarine (firm)
1
package (3 ounces) cream cheese, softened
1
egg
1/3
cup milk
Lemon juice
Sugar
  • 1 Heat oven to 400ºF. Mix flour, 1/4 cup sugar, the lemon peel, baking powder and salt in large bowl. Cut in butter, using pastry blender or crisscrossing 2 knives, until mixture looks like fine crumbs.
  • 2 Mix cream cheese and egg in small bowl until smooth. Gradually stir in milk. Stir cream cheese mixture into flour mixture until dough leaves side of bowl and forms a ball.
  • 3 Drop dough by 8 spoonfuls about 2 inches apart onto ungreased cookie sheet. Brush with lemon juice. Sprinkle with sugar.
  • 4 Bake 16 to 18 minutes or until golden brown. Immediately remove from cookie sheet. Serve warm.

These were very tasty but had next to no lemon flavor. I even mixed lemon juice into it and still couldn't taste it. Next time I'll go overboard with the lemon and maybe it'll taste like lemon. Overall they were really good just no lemon flavor.

These ended up being very tasty and flaky. I used a little more lemon zest because the earlier comments said it wasn't very strong. I also made a milk/lemon juice/powdered sugar glaze for the top which makes them sweeter. I also split mine up into 12 scones instead of 8.

These scones were very good and I loved the fact that no heavy cream or half and half were required! The scones weren't very lemony though, next time I will mix lemon juice into the dough instead of just brushing it on top. I would also separate the dough into 12 scones instead of just 8 for a better size for me.
