Individual lasagnas, baked in muffin cups, are prepped in 15 minutes and ready in an hour! They're kid-pleasing, and vegetarian too.

Made a few swaps for what was readily available (1 can garlic and herb pasta sauce, actual sweet Italian pork sausage rather than the soy crumbles, two wonton wrappers for the bottom potsticker wrapper) but still came out great. Very portable and tasty, and surprisingly filling. Just make sure to spray the muffin tin with nonstick spray, and if you can't find potsticker wrappers, the wonton ones worked fine (just put two in the bottom and used one for the middle to separate layers). I couldn't get all three layers to fit in the muffin tin (so it went wrapper-sauce/sausage-cheese-wrapper-cheese-sauce/sausage-topping), so the ingredients stretched to make 18 cupcakes instead of 12. Nice surprise there. I had made these to take to a family that just had a baby, and they worked great -- and I had plenty of leftovers that I individually froze to bring to work for lunch! Great recipe, and great base idea that can be swapped out with other ingredients (maybe a BBQ beef with peppers and cheddar, or taco-seasoned chicken?) to give you a bunch of variations.

I made them with egg roll wraps and added fresh spinach to the sauce. They were very good. The egg roll wraps tasted very good and were crispy on top and soft on the bottom. My husband and kids liked them a lot. My husband said they looked like they were from a restaurant. Easy to make, they taste good and they look elegant.

We are vegetarians, so added a mixture of onions, olives, broccoli, red peppers, and mushrooms diced fine. They were delicious. Made some ahead of time, then took them to work and baked before serving. A big hit.

These are great! The cook time is just right! I made this with actual Italian Sausage and threw some zucchini bits and sliced olives into the meat mixture. Then I cooked it for about 10 minutes to let the flavors merry and the zucchini soften before layering. The tops do get a little crunchy, but this is such a genius idea, we didn't really mind at all!

I've never written a recipe review but I had to for these. I used square wonton wrappers (which if you look closely at the picture, I think they did too). They wrapped nicely and didn't get too crunchy. I put down some sauce first at another poster's recommendation; good advice! I only made 8 - just kind of modified the recipe. This is great for a smaller family because you don't have to eat lasagna for days! So fun to make, so fun to eat, these will definitely became a new vegetarian staple in my line up.

These were tasty as well as fun to look at. I basically used the idea with my own ingredients- homemade meat sauce, olives and bell peppers, they turned out pretty nice. Tips-spray the pan well as well as put some sauce down before you put in the wrapper-easier to scoop out. I didn't cook them the full thirty minutes and they were fine, but when you take them out, you have to wait until they firm up so you can scoop them out. Only complaint, they were a little too crispy on the top edges, wish there was some way to get rid of that. They were very small, probably due to the wrappers which are the size of a small glass. Pot sticker wrappers can be found next to the tofu and other items, usually by the vegetables, in the picture though it looks like they used something else as it wraps around and has edges. This was a good idea.

I really liked this idea. I tried this with a real lasagna noodle, meat and cheese, if it cooks for 1/2 an hour in total, I don't understand why it wouldn't work just as well with real ingredients.(there is a store near me that sells a lasagna noodle 12" wide and as long as you need it, I usually buy 5' to 6' long for my regular lasagna, with no boiling) I cut the circles to size like you would cookies. I also made them with a large muffin size tin, for a larger lunch size. I put extra sauce in the bottom and they slipped out just fine. I have a pot pie maker that I will try them in next. I baked some extra cheese and egg mixture in a corningware dish and plopped a spoonful on top kind of like frosting at the end. Everyone loved them,, it made them a little bit creamier. This site has a lot of great ideas that we all tweek to make them our own. I never would have thought of this without this Betty Crocker site thinking it up first.

I tried these for lunch today. They tasted amazing, but I used spring roll wrappers because I couldnt find the wonton wrappers, and Im not even sure if they are the same thing or not. The wrappers got really soggy, and we had to scoop them out with a spoon, but I would have to say that besides that little glitch it was an unquestionable success! Everyone loved them!! Also, to phyllsplace, I am going to try them using puff pastry next time....
