Sauce

cup plain fat-free yogurt

tablespoons chopped fresh mint leaves

tablespoons red wine vinegar or cider vinegar

teaspoon chopped fresh or 1/2 teaspoon dried rosemary leaves, crumbled

teaspoon ground cumin
Burgers

lb lean ground lamb
1
small onion, finely chopped (1/4 cup)

tablespoon chopped fresh mint leaves
1/2
teaspoon salt
1/4
teaspoon pepper

cloves garlic, finely chopped
  • 1 In small bowl, mix all sauce ingredients until well blended. Refrigerate until serving time.
  • 2 In large bowl, mix all burger ingredients until well blended. Shape mixture into 6 patties.
  • 3 Spray 12-inch skillet with cooking spray; heat over medium heat. Cook patties in skillet 5 minutes; turn. Cook 3 to 5 minutes longer or until no longer pink in center. Serve with sauce.

Expert Tips

Mix and shape the meat patties the night before, and make the sauce, too. It’ll be smooth sailing at dinnertime.

Stir some chopped cucumber into the sauce. The result is very similar to raita, a refreshing dish from northern India that’s often served as a relish with curried foods.
