Kiwi and Strawberry Shortcake Squares
It's ok to be square—when squares of moist, tender cake are filled with sliced strawberries and chopped kiwifruit, that is!

I made this from leftover blueberry pancake batter. I added sugar, butter and some peaches and then baked it. It turned into a great cake that the kids ate and enjoyed (they didn't like the pancakes - who knew!?!). So breakfast was redeemed and I have a new recipe. Next time I'll save it for dessert and serve it with whipped cream :)

We loved the Kiwi and Strawberry Shortcake Squares. It was just sweet enough for a light dessert. Plus it was so easy to make. I have left out the kiwi before and added more strawberries, and that is really good too.
