i tweeted the recipe quite a bit...i used 15 graham crackers and lime zest with 1 tbsp of cinnimon. Baked it as the directions called for. Then I topped the finished product with Cool Whip....it was AWESOME.

I made a few changes to the recipe and it turned out better. For the crust I used 1 package graham crackers (1 1/4 cups approx), 4 tbls melted butter, 3 tbls brown sugar (light or dark). Pulse crackers and sugar in food processor then add butter. Line 8x8 pan with foil (to make taking out easy). Press crumb mixture in and bake 325 degrees for 18-20 min. For the batter, use 1/2 cup lime (or lemon) juice, and add 1 egg and add the rest of the ingrediants. If you want you can double the zest but make sure you dice it fine with a knife. If you want you can add 1/2 to 3/4 cup of the sweetened coconut to the batter itself rather than on top. Also you can add 1/2 cup or so of white chocolate chips to the batter. Bake 20 minutes until set. cool 1.5 hours and then put it in fridge for at least 2-3 hours. I did the lemon version and it turned out great. Crust was solid but melted in your mouth.

This was a very easy recipe to make. I made a graham cracker crust instead and it tasted great. I do think a little more lime wouldn't hurt, though. They weren't quite tangy enough for me. But it's an overall very good recipe. I'll make it again!

I tried these to take to our St. Patrick''s Party last night and they turned out awful-I was embarrassed because everyone always raves about my baking. The crumbs did not hold together and the cream cheese wouldn''t cut evenly - most of it came off on the knife, even though I tried dipping in water before slicing. It didn''t even taste like my previous key lime goodies!

This is a great quick recipe! The Key Lime comes together very quickly and when finished is light and fluffy. I have even just taken the lime mixture and added it to a pre-made gram cracker crust pie tin to make a quick key lime pie. Wonderful, easy, fun, delicious!!!
