It was a good recipe but kind of dry. I used rotisserie chicken and had to use 1 and a half of the bisquick mix to cover the filling. It had a really good flavor but, again, it was kind of dry. I did try peanut sauce on the side and it was too over powering. Definetly needs a sauce.

I made this last week and my wife Loved them! I added some fresh broccoli (cut into small pieces) to the mixture and doubled the curry paste. I also used a little soy sauce and garlic when cooking the chicken, just because that's what I always do when cooking for an asian flavor. I highly recommend using a sweet chili sauce or a peanut sauce for dipping on the side. They were great by themselves but with the sauce(s) they were amazing! Will definitely keep this recipe on hand.

Being Thai, I was excited to find this recipe. Instead of using red curry, I used Tom Yum paste. For those who are not familiar with Thai food, Tom Yum is a spicy and sour soup (so I figured this should go well with lime juice). I put in a spoonful of the paste since my (American) BF and I both like spicy food. It came out very tasty and good for a light dinner. Note that you can find this paste in most Asian grocery store, and some brands already have lime juice in it so taste before adding any more.

wow, i wasn't expecting this to work as well as it did. Very tasty and easy. I had lots of chicken mixture left over so I guess I will make lettuce wraps with that.

Tasty! I followed the other suggestions and added 1tsp of curry paste, and also cooked a garlic clove with the chicken mix. I found it easier to just throw the peanuts in with the chicken before baking and didn't bother putting them on top. I thought they turned out nicely.

I thought these were a little bland, so next time I will up the amount of red curry paste. I also overbaked mine a little, so remember to take them out before the 30 minutes.

I made these last night and they were awesome. I added Garlic Chili Paste to the meat mixture. NOTE THEY DIDN'T TAKE THE FULL 30 MINUTES TO BAKE. I baked them about 20 min and they were done. I also forgot to add the peanuts after the 10 minutes of baking. I just put them on as a garnish along with the scallions. These would make great appietizers. I served them with some raw cabbage and Thai peanut sauce.

I made this last night. It was pretty good. However, I am glad I followed my gut instinct. I tasted the chicken mixture after everything was added & I thought it was pretty bland. So, I doubled the Thai Red Curry Paste. That made it more flavorful. Also, had I not checked on the "Pies", they would have been burnt. They were done in 20 minutes. I served these with Pad Thai noodles & it did turn out a good meal. I will be making it again.
