cups uncooked regular or whole wheat elbow macaroni (8 oz)

cups fat-free (skim) milk

tablespoons Gold Medal® all-purpose flour

teaspoon Dijon mustard
1/4
teaspoon salt
1/4
teaspoon ground black pepper
1/8
teaspoon ground red pepper (cayenne)

cups shredded reduced-fat sharp Cheddar cheese (8 oz)
  • 1 In 3-quart saucepan, cook and drain macaroni as directed on package. Return to saucepan; cover to keep warm.
  • 2 Meanwhile, heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In 2-quart saucepan, stir milk, flour, mustard, salt, black pepper and red pepper with wire whisk until smooth. Cook over medium heat, stirring constantly, until mixture boils and thickens. Remove from heat. Stir in cheese until melted.
  • 3 Add cheese sauce to cooked macaroni; mix well. Spoon into baking dish.
  • 4 Bake 20 to 25 minutes or until edges are bubbly.

This macaroni and cheese has gotten a few negative reviews but I beg to differ. I made it for my boyfriend paired with green beans garnished with almonds. I didn't have any flour on hand so I used the Bisquick Heartsmart mix instead to avoid going to the store. I also substituted the Cayenne for Chili powder. To the milk mixture I added a tablespoon of Philly cream cheese after I had heated up the milk to thicken the sauce. To add a bit of mac crust I I sprinkled with some extra cheese and panko breadcrumbs (a good amount, about 1/3 cup) before putting into the oven. My boyfriend and I thought it turned out awesome- nice and crusty top if you like that in your mac. I will be making this again.

My husband and I really enjoyed this recipe. After reading the reviews, I decided to post because I enjoyed this mac and cheese very much. It is super, super important to mix the flour mixture very well with a whisk. I added the cheese little by little while the mixture was still on the stove on medium heat, and continually mixed it until it was a thick, well mixed consistency. Anyone who makes fondue will know what I am talking about. I baked it for about 20 mins in a glass baking dish and served piping hot. great addition to our recipe box!

One spoon rating is being generous...Really craving mac & cheese I was excited to try this. After reading the reviews I to used a lot more cheese than asked, about 3 cups. That still wasn't enough! After probably 5 cups worth of cheese it was still bland tasting. I even added bacon bits for some flavor. I'm not sure if I didn't cook the first milk, flour, etc. mixture long enough or what but the dish turned out a very "grainy" texture that was unbearable! I've never really made a dish that was so gross I couldn't finish, but tonight this one was it :( This recipe was a huge disappointment!
