Tried this healthy dish tonight and my family loved it! As others did, I doubled the sauce ingredients because my family likes alot of sauce, and I wanted enough to have on the rice with leftovers. I also put a clove of chopped garlic with the chicken/ginger. The red pepper flakes only gave it just the slightest hint of spice, but even my kids didn't think it was hot - just added flavor. We also used honey roasted peanuts, because that is what I had on hand. This recipe can be adapted to using many different veggies, including green peppers and onions to make a pepper chicken. Next time I'll add water chestnuts and carrots because my family likes those in stir fry.

This was really good. I doubled the sauce part so there would be some for the rice. I will definitely make this again. This dish had alot of flavor and was more healthy than what you would get in a restaurant.

I like that what the recipe is attempting to do (higher veggies, lower fat, lower salt), but unfortunately just didn't care for the flavor. It didn't remind me of cashew chicken, it tasted more like a typical stir fry with soy sauce.

Very tasty! We substituted roasted almond slivers (we roasted the almonds)in place of cashews since I'm not fond of cashews, and added 2 cloves chopped fresh garlic while cooking the chicken and gingerroot. Otherwise we followed the recipe exactly. Our family really liked! Think next time I'll use a white onion coarsly chopped in place of the green onions.

Really great dish quick to make when you can't think of anything to make for dinner. The sauce didn't get thick when I first added it in, added in a little extra cornstarch and water and it thickened up perfectly. I added mushrooms for a little more meaty taste to it. Great meal!

I omitted a lot of the ingredients. It came out okay, a little salty, possibly too much soy sauce? The cashews I bought were plain as well, but still tasted good.
