My husband hated carrot cake until I made this for him. It's so moist and delicious! I have had it in restaurants and been disappointed after making this! I have yet to taste another carrot cake that tastes as good as this one, and it's healthier! LOVE THIS RECIPE!

I think it's better to use only 2 cups of powder sugar. You get more of the cream cheese taste. Adding three takes away from that and just tastes like a sugared frosting.

We didn't feel there was anything missing from this version. Loved it. Made it as 13x9-inch cake. Followed baking time from another carrot cake baked that way. Perfect.
