I made this for lunch today...It was fabulous...I added a can of Ro'Tel to the meat mixture and spread each tortilla with re-fried beans...It made 6 shells because of the extra tomatoes...I made it in a 10 inch pie plate and worked out wonderfully...Served it with shredded lettuce, chopped onion, grated Sharp Cheddar Cheese, salsa and sour cream...It did make 6 large servings...

I made this recipe with just a few modifications , it turned out excellent .... very tasty , I did wait 15 minutes prior to cutting and serving ,it firmed up quite well . I added more cheese on each and every layer , I used a spicy Enchilada sauce and put a thin layer of sour cream on each layer other than the top , and placed all in a 9" square pan which fit almost perfectly and it was marvelous to the taste buds........

This was easy, quick, and great tasting! I did not have frozen corn so I used canned corn, and I baked it in a cake pan. Other than that, I went right by the recipe. My husband really liked it! Having the hamburger already browned and the onion already chopped, I threw this together in no time. Great with a salad, chips and salsa!!! I will definitely be making this often.

This recipe is great! It is easy to adapt, too. I used ground turkey, Ro-tel tomatoes, whole wheat tortillas, and added sliced jalapenos and black olives to the top layer. Then I topped it off with sour cream when it came out of the oven. I used a glass deep dish pie pan and cooked it for 25 minutes. A bit of advice: this dish needs to rest for about 15 minutes before you cut into it, because it gets very juicy, (at least my version did!) I think it would be great to garnish this with avocado and a lime wedge.

This is a great recipe!! I even got good scores from my husband who rarely says anything. I didn't have the corn requested, so I substituted frozen corn, black bean, and vegetable combo and I added a bit more than 1/2 cup to bulk it up with more vegetables. It was yummy and I would definitely make this again. From my calculations, I got 8pt./serving for WW Points Plus program.

This was great. I made this for the first time last night and it was a total hit however I did tweek the recipe to my liking. I used ground turkey, about a tablespoon of cumin, instead of chili powder I used an old el paso chili seasoning packet, I added a chopped jalapeno pepper and a gutted and diced small tomato, and I used adobo instead of salt. Also I used the whole tortilla package and layered two in between each layer with cheese in each layer as well as on top. It turned out amazing and I will definitely make it again. Since its only me and my bf, its a large portion so I have leftovers to eat for lunch today! Totally recommend!!
