This is a great recipe! I had heavy cream, so I looked up the substitute: half heavy cream/half milk to make up the 3/4 cup of half and half called for in the recipe. It took a few more minutes to cook mine to get the center to set up. I used shredded pineapple.

It was ok, but I like Quiche Lorraine much better! That said, this dish improved after a few days in the refrigerator, when the floavors had blended.

This is the best quiche ever. I have made it several times with a different twist. I have substituted bacon for ham, and swiss cheese for cheddar. I have even used eveporated milk instead of half and half. I have made it with broccoli and grape tomatoes it is a very versitle recipe as long as you use equal amounts for the substitutions.

RE Mrs.Jane: Are you referring to a pie crust? The number of eggs you use in a crust is dependent on what else is in the recipe. Usually 1 egg is recommended.

I had this recipe years ago and lost it. It is one of the best quiches I have ever made. My family loved it. It was great for breakfast, lunch or dinner. I am so glad to see it again.

Put the cheese in the crust first. It has a tendancy to plot to the top and congeal. When it's at the bottom, it mixes better throughout the quiche. Also seems to be more tasty if the ham is not too finely chopped.
