lb extra-lean (at least 90%) ground beef

can (14.5 oz) stewed tomatoes, undrained

medium celery stalk, sliced (1/2 cup)

cup uncooked orzo or rosamarina pasta
1/2
teaspoon salt
1/4
teaspoon ground red pepper (cayenne)

cup Yoplait® Fat Free plain yogurt (from 2-lb container)
  • 1 In 10-inch nonstick skillet, cook beef over medium-high heat about 6 minutes, stirring frequently, until brown; drain.
  • 2 Stir in remaining ingredients except yogurt. Heat to boiling. Reduce heat; cover and simmer about 12 minutes, stirring frequently, until liquid is absorbed and pasta is tender. Serve with yogurt.

My husband and I just loved this recipe. He was impressed that I was cooking Middle Eastern. He thought I spent all day in the kitchen. Ha ha. I sure did fool him. This recipe was so easy I felt like I was cooking Hamburger Helper. But, way more tastier. And, like another comment said; my stewed tomatoes didn't have much liquid so I also added water. Next time I think I might add some tomato sauce and a little water. To give it more tomato taste. I was unsure about the yogurt but it gave it more of a creamy texture. I am definitely making this again.
