I made this last summer as a side for the Margarita Chicken Fajitas...(also on this site) and my dad''s family loved it. I actually made shortcakes to go along with the sweetness of the fruit and sauce, and it was great as a topping too. By the end of the night, I ended up with leftover shortcake, but no more salad. I experimented with different fruits too... I didn''t add watermelon cause I couldn''t find any good ones, but used lots of strawberries, blueberries, mango, peaches, and other fruit, and they all came out tasting wonderful. Actually gonna use it again for a party side. Gotta love Betty!
