You'll fall in love with these pumpkin bars! They have a light texture, are full of cinnamon, ginger, raisins and nuts, and are topped with cream cheese frosting.

This was very good and easy to make. I substituted walnuts for pecans since my husband is allergic to walnuts, and we really enjoyed it. The pumpkin "cake" was a little more subdued than I was expecting, thought it was still yummy. And I left the raisins out.

These are absolutely the best! My daughters have to eat gluten free and not only did they love them, but everyone else as well! Highly recommend them for anyone to make! Absolutely delicious!

I made this into a pumpkin roll. Wasn't sure it would work but tried it and it rolled perfect. I baked pumpkin rolls for the church and made one gluten free. several people chose the gluten free over the regular rolls. I varied the spices a little I left out the ginger and replaced it with nutmeg to make it the same as my regular pumpkin roll. it was nice to be able to cater to the ones who usually have to move on when we have a treat after service.....thanks Betty Crocker !

I have searched for this recipe for years. I finally found it on here. I made it with in a few days and this cake is wonderful. It sure didn't last long around my house.

These bars were ADDICTINGLY good (is that even a word?) And I instantly got requests for the recipe even though everyone at my office knows I eat gluten free. Note that I made my version without the raisins or nuts and substituted pumpkin pie spice for the ginger and cloves. I also added some cinnamon to the cream cheese frosting (which I made dairy free). Incredibly moist and incredibly yummy and like I said before, ADDICTING. This is a keeper recipe for sure.

A great alternative if your looking for a healthier version is to only add the pumpkin puree to the cake mix; do not add the water or eggs or any of the ingredients indicated on the box. Mixture will be thick. You can add chocolate chips or raisins at that point and the spices to add to the flavor of the cake. Frost with cream cheese frosting. Trust me it is to amazing and a bit healthier!

Thought the cream cheese frosting was a little powerful for the pumpkin, I didn't really think the cake part had enough flavor. Other than that it was good, plenty moist and easy to make.

These are amazing! They are so moist! The second time I made them, I made them into cupcakes. They came out great! I used the foil wrappers, since the pumpkin is heavy. I whipped the frosting because the cupcakes did not rise much. I switched out the cream cheese frosting for butter cream, which was an accident when food shopping, but worked out well! I served them chilled and they were a huge success! I still hear about them months later :)
