I made this tonight and it was excellent!! I did add grilled shrimp to it, since it was not important to our family to keep it completely vegetarian and I did not use gluten free since that was not a concern for us, either. The only other very small change that I made was to add about 1/4 tsp red pepper flakes. My family has asked me to make one again real soon.

I haven't tried this yet, but it looks good! I do think it would be just as good if made with regular pasta and cheese if you're not worried about gluten. I like how this recipe is both vegetarian and gluten free. That is not an easy thing to find!
