I've always felt eggplant to greasy for my taste. We grew eggplant this yr so I have been looking for recipes that the eggplant does not need to be breaded a fried first.This recipe is so yummy and easy. Our eggplant was small tho...long and skinny. We cut the eggplant lengthwise and cooked according to the recipe. It was quick and delicious.

This was my first time trying eggplant, and I was NOT impressed...neither were my kids (and I usually like my veggies). The marinara sauce was the only good thing about the recipe. I don't think I will be trying eggplant again for a long time!

I think my eggplant was a little larger than they called for, I used about 1/2 cup more sauce and cheese and cooked it a couple minutes longer but it turned out absolutely fantastic! Thanks BC!

very easy dish to make! i used the Italian Eggplant where the skin is very tender, i too added a little twist to it with a very thin slice of red onion and red pepper and a slice of a big boy tomatoes on top of the eggplant before the bread crumb mixture, a little sauce and a slice of fresh mozzarella!!!YUMMY

RE Krisb781: The eggplant in this recipe can be peeled as it is instructed in the ingredient list or unpeeled as it is in the photo. The skin is edible and some people like it's texture, extra nutrients, and added integrity. Others think it's tough and bitter so whichever is your preference, it can be made either way. Freshly picked eggplants have more tender skin.

I haven't tried this yet, but it looks good. I usually fry my eggplant and I am interested in a healthier version. One question before I try it...I've never left the skin on. Does this cook in a way to be ediable or is it ate around? thanks!
