stick (1/2 cup) butter, softened

teaspoons rum extract

teaspoon gluten-free vanilla

teaspoon ground nutmeg

cup Betty Crocker® Rich & Creamy vanilla frosting

cup chopped pecans
  • 1 Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only of (8- or 9-inch) round or square pan. Beat cake mix, milk, butter, extracts, nutmeg and eggs in large bowl on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.
  • 2 Bake 33 to 41 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Run knife around inside edge of pan. Cool 30 minutes longer.
  • 3 Heat frosting in microwavable bowl 10 to 15 seconds or until easy to drizzle. Drizzle frosting over cake; sprinkle with pecans.

I made this cake to serve on Christmas morning and it was a great hit with all concerned. Nobody even thought it might be gluten-free. The taste and texture of the cake was just right-- a not too sweet coffee cake in the best tradition. I just topped it with a little powdered sugar instead of the icing and nuts. This is sure to become a year round favorite at our house!

Finally my husband can have coffee cake at Christmas brunch just like the rest of us. It was a hit with everyone. All other coffee cakes I have tried call for all those different flours and always came out d-r-y! This was moist and so easy to make. Thank you to the folks at Betty Crocker for making life a bit easier for those that need to bake gluten-free.

Made this for a Christmas brunch and it was enjoyed by everyone. Usually left-over gluten-free foods are sent home with me. This time the hostess asked if she could keep the few pieces that were left.
