I used enchilada sauce instead of the tomato sauce and replaced red chilli powder with Hot and Spicy Taco Seasoning. It came out amazing and hubby and I both loved it!

It was pretty good, but needed a little something extra. I put in more chili powder,and garlic powder than called for I also added cilantro, it was decent but not amazing. The beef taco rice on this site is much much better.

My husbands birthday was on Monday so I made him a big o mexican dinner. This recipe was one thing I made. It was perfect he loved it and everyone that eat some loved it too.

My family has been eating this recipe for years. As someone who doesn''t like chunks of tomatoes in spanish rice, this recipe is perfect. The flavors all blend in perfect. The lighter version we make cuts back on fat but still tastes great. Adding leftover taco meat to the rice makes a great meal the next day.
