DELICIOUS! My husband is a lobsterman so when he brings snacks for the boat he needs things he can eat quickly and is easy to carry. I made these cookies but omitted the frosting and instead added some chocolate chips. My husband, my daughter and I have found a new favorite! This batch didn't last 2 days!

These were a hit and really simple to make. My husband is not a sweets person and he loved them. Next time maybe I will use the spice cake mix instead of the carrot cake.

VERY Easy recipe, AMAZING Cookies! I've made these for the past two Thanksgiving for people that ain't huge fans of Pumpkin Pie. These cookies went FAST! Once you eat one, you can't stop! Also, Very good using Spice Cake mix instead of Carrot Cake Mix.

These are very simple and pretty tasty. Make sure you smooth out the batter because they don't flatten/smooth when they cook...they come out looking the same way you put them in. I found that the back of a wet spoon helped smooth and flatten them before cooking.
