Someone asked about making it o.k. for celiacs. Find a way to add heat that has no flour in it. Green chilis are popular here. Finally I found recipes that didn't have too much fat. who knew I had to look under diabetic recipes?

This is my very first Betty Crocker Recipe I have made. I am trying to eat a healthier and I must say this was pretty tasty! I served it in a bowl w/out tortillas. I'm completely satisfied! I did make a couple changes. Instead of using taco seasoning and plain black beans I grabbed a can of Bush's chipotle black beans it has a little corn in it. Absolutely divine!

Very good.....Family loved it!!!! We had this like soft tacos. Used lettuce, cheese, tomatoes and sour cream!! Again family loved this, will be a regular dish!! Side dish was the Easy Spanish Rice.

I loved the idea behind this recipe. I had to substitute ingredients when I tried it because several things weren't available to me. The chicken was sauteed in olive oil. I used 2-12 oz pkgs frozen corn with black beans, onion, and red and green pepper; 1 cup of water; 1 pkg (1.25 oz) taco seasoning; then added 1 tsp garlic and 1 tsp. cumin. I refuse to pay 3 dollars a pound for tomatoes so I drained well 1-15 oz can chopped tomatoes with garlic and basil. After cooling the chicken corn mixture, I topped it with shredded lettuce and the drained tomatoes for appearance. Shredded cheddar jack, salsa, sour cream and tortilla shells were set out to use at guests discretion. It went over big! Some even loved it without the tortilla shells! YUM! It easliy served 8. Also, this was good "nacho cheese" style with the corn mixture spooned over tortilla chips, sprinkled with the cheese and heated until the cheese melted. Garnish with lettuce,salsa, and sour cream.

I will definitely try this one with added spices/condiments to give the "heat" that I like. I wish these recipes would give SERVING SIZE. I am diabetic and that is one thing emphasized at our "classes". This recipe does give how many servings, but not the serving size.
