YUM! Very good and so easy to make. I add more sour cream and cheese and also jalepenos to it. A keeper in our house!

Yep...I found the Progresso soup at a local Brookshire Bros. It was the Chicken Cheese Enchilada Flavor! This is a great recipe & my family loved it! I am making it again tonight just cos it tasted so good!

I couldn't find the soup either. I had to work that day so I put the chicken breast in chicken stock and canned diced green peppers in the crockpot all day. The meat was perfect to throw in the recipe when I got home! this was (even with the added step) VERY easy and yummy. I topped the final product with diced tomato, shredded lettuce sour cream and olives YUM!

This was very simple to make. I couldn't find the soup mentioned in the recipe but substituted another Mexican-style soup with black beans. I'm looking for the correct soup to make it again. My husband really enjoyed the enchiladas, but he liked them even better the second day when he took some for his lunch. He said the flavors melded more and were yummy!

I also could not find the soup mentioned and instead used Progresso's Chicken Tortilla soup. Found the recipe to be just OK. A good, quick week night meal to make with left over chicken and stuff you may already have on hand.

This dish was fantastic. My husband loved it and I will make this again. I saw others comment on not being able to find the soup. Well I couldn't find it at two of our grocery stores either so, I googled it and it was only sold at walmart. So good luck finding the soup because this dish is well worth it.

I have made the enchiladas many times before seeing this recipe. The soup is fantastic for all sorts of recipes and what is so great about the soup is it is LOW carb! YES Low carb! You can make this recipe without the tortillas and even lower the carb count! Love it!
