Easy Baked Chicken and Potato Dinner for Two

Wow this was a great recipe. In case anyone is wondering, its is still good if you only have yellow mustard. Also its important to boil the potatos prior to baking or the recipe wont work. I will definitly be making this one again. Oops almost forgot, I added a little white gravy at the end to moisten it up, which was perfect, gave it a little morning breakfast feel!

My Family loves this. My 19 yrs old goes" what is on this it is really good it nice tohave some food with flavor" normally I don't cook with salt or pepper due to health issues.

This is simple, quick, and healthy. I used panko bread crumbs in which I added about 1 tsp. Italian seasoning. Also, to ensure the potatoes being done when the chicken was, I put the whole little potatoes in the microwave for about 5 minutes, to start their cooking, then I quartered them. I also added fresh garlic slivers to the vegie mix! Terrific flavors! Next time I will try added blanched baby carrots or some broccoli to the middle vegie mixture.

This dish lacked flavor and texture. I waited the potatoes out to try to get them done, and like other reviewers, I just wound up having to endure tough under done potatoes. The chicken was a little dry, and overall, the dish just had no flavor (And I used the BEST Dijon mustard.) I will not be making this dish again. I do, however, appreciate recipes aimed towards 2 people vs 4. So Kudos on that :)

This recipe was delicious. I boiled the potatoes while I prepped the rest of the dish to ensure that they cooked through. My boyfriend loved the way this dish reminded him of his favorite honey mustard & onion pretzels. I'm constantly searching for budget-friendly recipes for just the two of us, and this is definitely a keeper.

My husband and I both loved this recipe. Be careful not to overcook the chicken. Instead of the red peppers, I added squash. And instead of spraying the veggies with cooking spray, I drizzled them with Extra Virgin Olive Oil. A good choice for healthy meal.

This was very disappointing, I love cooking with dijon mustard it usually gives a fabulous flavor but not this time. Both the chicken and potatoes were very bland! Also the potatoes did not want to cook enough, I finally gave up and we ate somewhat tough potatoes, I won't make this again

Just finished eating this for dinner, and we loved it. I was a little worried about the reports about the under cooked potatoes, so I covered the dish for 45 min, and then let it finish browning. Worked great.
