This cake was super easy and SUPER adorable! The only thing that was kind of difficult was putting on the coconut shreds onto the sides (but I'm pretty sure that was only because I used more graded than shredded). Overall this cake was a hit.

This cake turned out beautifully and tasted fabulous, thanks to everyone's suggestions. I used a white cake mix, whipped vanilla frosting (1.25 cans), homemade lemon curd for between the cake layers, sweetened coconut flakes, and almond biscotti for the ears. Freezing the cut cake parts was essential to being able to frost the cake. My family loved the cake, and it will become an annual tradition!

I made this yesterday. I used anisette biscotti for the ears,covered with icing. Then mixed up coconut with pink coloring for the inside of ears. Also, An orange fruit roll up for some carrots and green sour candy for stems. I saw it on the other cakes listed here. The whole cake was edible. It was a fun cake!

I made this cake with a loaf pan and a cup cake pan. It was a lot easier than dealing with cutting the round cakes. At least I think so. I also just used what I had on hand, and had chocolate icing and cake decorations that I've kept from previous holidays. Mine came out cute... Oh yeah since my son is 16 and we're a little old for cutesy Easter ideas, I put some strawberry jam in the middle layer of the loaf pan so that when we cut open the bunny tomorrow... you get the idea. It was really fun.

I used strawberry cake mix in stead of carrot and it turned out really yummy. Also, I couldn't find construction paper so I used white pipe cleaners for the ears!! Gonna make this cake a tradition.

Hey ChrisH2012, I always use sweetened coconut - tastes better than unsweetened w/the cake and frosting. :) Another hint - you can always add a little almond flavoring to the cake mix if you like the almond/coconut combo. :) I've even seen a pina colada flavoring that I bet would be awesome. I make one bunny for the kids and a second bunny for the adults. This year, I think I'm going to brush some rum on the cake itself for the adults. I also add in a special little candy treat (like a hershey kiss) between the layers as you assemble them for the body (like a King Cake treat where you find the baby). :) YUM!
