I wanted a crab cake recipe that I didn't have to tend to in a pan on the stovetop, so baking these worked out great. I also only had Progresso panko lemon pepper bread crumbs on hand. So I omitted the ground pepper and red pepper sauce, and used a bit less lemon juice, and used dried herbs. (Thanks for that substitution note at the bottom.) I made small cakes for appetizer size. My guests said liked them very much and I had no leftovers! Just the recipe I needed.
