I didn't see any responses back to the water/milk discrepancy. I used milk and found it a bit dry. I wasn't sure if I wanted to try it again, but adding some applesauce sounds like a good idea.

This was really dry -- and indeed the box said to add the milk for the Quick Bread, but water was listed in the ingredients, not milk. I think I'll play with it next time -- or make one from scratch -- so it's moister.

My box of mix says to use water, but in the directions it says to use milk. Can you tell me which one is correct?

Real easy and yummy, I cut the fat and calories a bit by using eggbeaters and it comes out nice and light and fluffy. I suppose you could probably cut out some oil and replace it with some applesauce as well.

I use this recipe. But I add to it. I used a 8X8 pan I filled bottom of pan with fresh apples peeled cut into wedges covered with 3 TB spoon of brown sugar, 1 TB spoon of sugar, and 1 TB of cinnamon. Poured batter as the recipe called for over top of the apples. Then I served it warm with caramel. This was super great

When I made this box mix I didn't have any oil or milk. I used 1/2 cup buttermilk for the 3/4 cup milk. I put in 1 cup of smashed really soft cantaloupe in place of the oil. Baked them in jumbo muffin pans and added 5 minutes (total of 26 minutes) to cooking time. They came out of the oven perfectly risen and with a very moist crumb inside. Perfect for breakfast served warm with a pat of butter.

I've made this for my kids in SS and they love it, I was surprised that 6-8 yr olds would prefer cinnamon to chocolate chip muffins/bread, but they gobbled them up, esp since I had milk to go w/it. Very yummy.
