I use this recipe. But I add to it. I used a 8X8 pan I filled bottom of pan with fresh apples peeled cut into wedges covered with 3 TB spoon of brown sugar, 1 TB spoon of sugar, and 1 TB of cinnamon. Poured batter as the recipe called for over top of the apples. Then I served it warm with caramel. This was super great

When I made this box mix I didn't have any oil or milk. I used 1/2 cup buttermilk for the 3/4 cup milk. I put in 1 cup of smashed really soft cantaloupe in place of the oil. Baked them in jumbo muffin pans and added 5 minutes (total of 26 minutes) to cooking time. They came out of the oven perfectly risen and with a very moist crumb inside. Perfect for breakfast served warm with a pat of butter.

I've made this for my kids in SS and they love it, I was surprised that 6-8 yr olds would prefer cinnamon to chocolate chip muffins/bread, but they gobbled them up, esp since I had milk to go w/it. Very yummy.

A friend makes this in her dutch oven at campouts - it's delicious. I don't know if she alters it, a little...

This was really simple and delicious. I have decided to add finely chopped pecans to streusel and put half into mix and half sprinkled on top of loaf. Yummy!

This quick bread muffin mix can be turned into deeeelicious easy cookies, if you stir 3/4 c oatmeal, 1/2 c oil, 1 T water and 2 eggs into the dry mix, then bake on ungreased cookie sheet at 350 for about 14 minutes. It''s portable like a cookie, but tastes like the top of a cinnamon streusal muffin.

Great recipe. Very easy and makes the house smell so good while baking. I used milk instead of water. I am wondering if you could add applesauce or pumpkin to make it even more moist. You could add pecans or walnuts too. It is very good, just as it is, warmed and topped with a little butter. Great with coffee! My husband loved it too.
