Directions

  • 1 Heat oven to 400°F. Grease bottoms only of 24 miniature (1 3/4x1 inch) muffin cups with shortening or cooking spray, or line with paper baking cups.
  • 2 In medium bowl, stir Bisquick mix, 1/4 cup sugar, the softened butter, milk, orange peel and egg until blended; beat vigorously with spoon 30 seconds. Divide batter evenly among muffin cups.
  • 3 Bake 10 to 12 minutes or until light golden brown. In small bowl, stir together 2/3 cup sugar and the cinnamon. Immediately roll tops of muffins in melted butter, then in cinnamon-sugar mixture. Serve warm.

I made these tonight but made them into regular size muffins. I used Splenda rather than sugar. To avoid a high fat content I sprinkled the Slenda and cinnamon onto the top. They are simply delicious and my substitutions made no difference in taste.

I'm sorry to say that these were really disappointing... I added extra orange peel because I got carried away and had an extra teaspoon. The batter seemed a little dry to me so I also added 1 T. OJ. There was hardly any orange flavor in my muffins. I would not have known they were orange muffins if I hadn't made them myself. The best part was the cinnamon sugar on top. I don't plan of keeping this recipe as I won't make them again.
