1 pouch (1 lb 1.5 oz) Betty Crocker® double chocolate chunk cookie mix
1/4 cup vegetable oil
2 tablespoons water
1 egg
2/3 cup chopped pecans
12 large marshmallows, cut in half
Frosting
1 cup semisweet chocolate chips (6 oz)
1/3 cup whipping cream
1 teaspoon butter or margarine
1 teaspoon vanilla
1/2 cup powdered sugar
  1. Heat oven to 350°F. In large bowl, stir cookie mix, oil, water, egg and pecans until soft dough forms.
  2. On ungreased cookie sheets, drop dough by rounded tablespoonfuls 2 inches apart.
  3. Bake 7 minutes. Remove from oven; immediately press marshmallow half lightly, cut side down, on top of cookie. Bake 1 to 2 minutes longer or just until marshmallows begin to soften. Cool 2 minutes; remove from cookie sheets to cooling racks. Cool completely, about 15 minutes.
  4. Meanwhile, in 1-quart nonstick saucepan, melt chocolate chips over low heat, stirring until smooth. Remove from heat. Add whipping cream, butter and vanilla; blend well. Stir in powdered sugar until smooth.
  5. Spread frosting over each cooled cookie, covering marshmallow. Let stand until frosting is set.

I made these today for the first time they were real easy to make. They are delicious but I think I will use milk chocolate for icing next time. Thanks for sharing!!!!

These are very sweet, but good. I would make them again for special occasions. However, if making only 24 cookies, they have to bake 4-6 minutes longer. Also, more powdered sugar is needed to get desired consistency. I think next time I will make them smaller.

Oh my gosh when this recipe showed up in my email box I couldn't make it fast enough! They were the big holiday hit! But why wait for the holidays to enjoy these cookies? Easy, and the taste is unreal. Dark chocolate or milk chocolate it just doesn't matter.

These were so easy to make and boy did they get great reviews. I used regular choc chip cookie dough thinkint that all choc would be to rich. They were great. The frosting is really sweet so they were yummy. I'm thinking about trying peanut butter cookies next time. I difenetly will use this recipe over and over, so easy and good.

First, I never could find the cookie mix. I went to 4 different grocery stores with no luck. Settled on another brand of cookie mix - sorry Betty Crocker. I did not add the nuts but followed the rest of the recipe. My youngest grandson loved them. No complaints from anyone else. Had a great taste.
