I love this! I made some changes and added an additional 2 cups of chicken broth, 2 cans of Rotel (1 pureed) instead of salsa, 1 can Mexicorn, and 1 can of black beans. I also added 1 teaspoon chili powder and crushed tortilla chips. I let it simmer of 30 minutes and placed whole tortilla chips in the bottom of the bowl and added the cheese on top. Delicious !!!!

Great soup w just a few changes: used 2 can rotel tomatoes (1 I pureed), added 1/2 tsp chili powder, 1/2 tsp cumin, 4 corn tortillas cut into small pieces, 1/2 cup corn,, cilantro. Let simmer slowly for a few hours then add cheese & sour cream for garnish. Makes hearty soup for hungry teens!

I added medium Rotel two cans and a whole bunch of cilantro.... OMG it was really great. The tortilla chips give it a thickness that is essential. I used blue tri colored chips and loved it. Its a definate must try. Gonna cook it again tonight : )

This was a delicious and easy recipe! The diced up avocado, sour cream and tortilla strips really add pizzaz. We have tried this kind of soup at several restaurants and felt that this recipe was even better than eating out!
