The 1 1/4 cup was too much wine. The chicken didn't brown well b/c of the amount of liquid and it looked like it was swimming in wine when I added all the veggies and olives. Despite that, the chicken and peppers tasted great! Next time I'll mix up the colors (so it looks good) and cut back the wine a little bit. The rice was a little bland so I might look for something to spice it up. Overall though, it was a hit. We just ate 15 minutes ago and I'm already receiving requests to make it again.
