If you have leftover mashed potatoes this is a great way to use them. I put the mashed potatoes in the bottom of the pan and add the rest of the ingredients on top. Instead of the bread crumb if you don't have any around I've add shredded cheese on top. Comes out really good!

Yummy!!! I did follow tips from others. I used package of chicken tenders. Sprinkled them with curry and dry mustard and cooked them slowly in nonstick pan. Used fresh broccoli and carrots (steamed). Shredded the chicken instead of cube. Instead of boullion I used chicken base and used 1/4 cup Hellman's and 1/4 cup sour cream. Served it with rice. My four year old loved it. Big hit. Definitely will make again and may try spinach with chicken.

I would really like to make this recipe, sounds delicious, but I don't have the chicken boullion. I have a ton of Chicken stock and broth, so could I possibly substitue one of these for the bouillon? Thanks = )

Very good I love the idea that Betty made up a homemade cream of chicken. But use Mayo not miracle whip (salad dressing) to sweet, and no mustard. Definitely add the 1tsp of curry that is what makes the yum in yummy. I didn't use broccoli spears I lightly steamed fresh broccoli cuts bite size. And shredded the chicken. It all makes it easier to eat. Thanks Betty you are my BFF. Oh and serve it with an mandarin salad.

Wow, I loved this! I think the flavor must vary depending on the brand and/or flavor of mayonaise and mustard you use. That is the only reason I can possibly imagine that some people did not like it. I alway change recipes, but I was happy to leave this one as it was (well, I added a little extra mustard because my mustard is a little mild.

I forgot to mention that I served this over rice. For SMK Morris, try layering in frozen green beans and then adding the chicken and sauce. It would also be great over rice.

Made this for my family this weekend and it was a big hit. I did make some changes... I used fresh brocolli and just steamed it slightly before layering in the pan. I also agreed with Shadow237 that it needed something, so I added 1 tsp of Curry powder and 1/4 cup of sour cream. That really did the trick. I also used seasoned bread crumbs (because that's what I had). My family loved it!! Said it was a definate keeper. Try this with the Curry - it really adds just that little something that makes this dish delectable....
