cup julienne carrots (1 1/2x1/4x1/4 inch)

cups Progresso® chicken broth (from two 32-oz cartons)

cups shredded deli rotisserie chicken (from 2- to 2 1/2-lb chicken)

cup frozen small cheese-filled tortellini

teaspoon ground nutmeg, if desired

teaspoon pepper

cups chopped fresh spinach
  • 1 In 4 1/2- to 5-quart Dutch oven, heat oil over medium-high heat. Cook onions, carrots and garlic in oil 3 to 4 minutes, stirring frequently, until onions are softened.
  • 2 Stir in broth and chicken. Heat to boiling. Stir in tortellini; reduce heat to medium. Cover; cook 3 to 5 minutes or until tortellini are tender.
  • 3 Stir in nutmeg, pepper and spinach. Cover; cook 2 to 3 minutes or until spinach is hot.

This is really good soup but even better if you add a jar of any type of creamy alfredo sauce. It makes it heartier and always use fresh whole bag of spinach and top with shredded parmesan. Pairs great with a gourmet grilled cheese.

I found this recipe to be very easy to prepare and tasted awesome. Will make it again. I used the tortellini filled with meat in place of the cheese filled and found it to be an excellent substitution

Very easy to make. I substituted frozen spinach for fresh and I used marinated chicken breasts (cut into bite size pieces) and just cooked them in the broth. The pesto is a nice touch. I also served it with grilled italian bread that I rubbed with fresh garlic. I think you could even use a couple of pieces of shaved parmesan cheese as a topping as well. I'll definately make this again.
