Cheesy Biscuit Casserole

Delicious for a hearty brunch or a comfort-food dinner, this homey casserole uses easy-fix Grands! buttermilk biscuits and two kinds of cheese—ricotta and Gruyère.

cup ricotta cheese
cup shredded Gruyère cheese
cup milk
teaspoon Italian seasoning
teaspoon salt
can (16.3 oz) Pillsbury™ Grands!™ Homestyle refrigerated buttermilk biscuits
1 1/4
cups Cascadian Farm® premium organic mixed vegetables (from 16-oz bag), thawed
tablespoons shredded Gruyère cheese

  • 1 Heat oven to 350°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray.
  • 2 In large bowl, beat ricotta cheese, 1/2 cup Gruyère cheese, the milk, eggs, Italian seasoning and salt with whisk.
  • 3 Cut each biscuit into quarters; add to cheese mixture and stir to coat. Stir in vegetables. Spoon into baking dish. Sprinkle with 2 tablespoons Gruyère cheese.
  • 4 Bake uncovered 35 to 45 minutes or until golden brown and knife inserted in center comes out clean.

Add diced fresh tomatoes for extra color and flavor.

Serve for brunch with fresh fruit or for lunch with a green salad.
