So far it looks good. Did not add the nuts since I did not have any on hand, but I did add raisins. I also had to add milk to the batter because it was really thick.

Ok, so my daughter looked at me like I was nutty and my husband kinda grunted "Oh," when I said I wanted to try this receipe. But, mom is always right!! The cake was fabulous!! I made it in the 9 x 13 pan, so I only used half the icing. (Put leftover icing in the freezer thinking I would use if for something else, but it looks like I'll be using it on this cake again in no time because this first cake only has 2 pieces left.

I made this April 24, 2011 for my Granddaughter's first Easter and it was GREAT. I added 1/4 cup of fresh shredded carrots to the frosting and it came out just like the photo only the top was decorated for a girl. Thank you Betty Crocker you have been there for the last 36 years for me.

my daughter and I both tried this recipe. they both turned out delicious. cooking time on recipe is more than required. I added half tsp nutmeg and 2 tbs roasted shredded coconut (unsweetened) in my version it tasted slightly richer.

Have made the cake in a 9x13 and two rounds. Going to try cupcakes, and hoping it's just a time adjustment. I use ALL applesauce instead of oil and it turns out super moist and dense. This saves calories and fat for the frosting! I also don't put in raisins or nuts because I have picky eaters. I serve them on the side, though it's not quite the same.

I don't bake often and have never attempted a carrot cake before. This was an easy recipe that turned out fantastic. My whole family loved it and it didn't last long in my house. This will be a reciped I do again.

used the recipe to make muffins. ditched the salt and added half a cup of low fat fresh milk. it had the right kind of moisture and it doesn't crumble when you eat it. my husband and officemates loved it!

This cake is one of the best carrot cake I have tried. It is a heavy moist cake and the frosting is great too.
