cup frozen bell pepper and onion stir-fry (from 1-lb bag)

oz smoked kielbasa sausage, coarsely chopped

teaspoon dried thyme leaves

teaspoon black and red pepper blend

cups chopped fresh tomatoes

can (15 oz) Progresso® black beans, drained, rinsed
  • 1 In 10-inch skillet, heat oil over medium-high heat. Add garlic; cook and stir 1 minute. Add bell pepper and onion stir-fry; cook and stir 2 to 3 minutes or until crisp-tender.
  • 2 Stir in corn, sausage, salt, thyme and pepper blend. Cook 3 to 5 minutes, stirring occasionally, until corn is tender.
  • 3 Stir in tomatoes and beans; cook 3 to 5 minutes, stirring occasionally, until hot.

This will go on our regular meal rotation! As others did, I made a few changes. Fresh green peppers and onions, canned corn instead of frozen, more kielbasa, added oregano and served with flour tortillas. Would suggest to drain before serving with flour tortillas as it did have a bit of a "sauce" that dripped out of the filled tortilla (but if you don't mind the mess, it worked!). Also served salsa and pickled jalapenos on the side. Looking forward to the leftovers!

this was an okay meal. i used fresh peppers and onions, added alot more cayenne and served it with rice. There wasnt very much flavor, rather boring. needs more spices. I will probably not make this again.
