After ending up with a couple dozen leftover bananas from a charity bike ride, I went looking for a relatively healthy recipe and I found this one and it turned out really yummy! Since I had so many bananas, I made several loves using currants in some and dark chocolate covered espresso beans in others and took them to the bike shop for the mechanics and others who may drop by. They were a huge hit! Since I didn't have any Fiber One Honey Nut Clusters, I had another Fiber One cereal on hand and used that instead. I ground the cereal up fine in my food processor although I probably did not need to do that. I personally love this recipe as it is nutritious and not oily like many of the others. Love it for breakfast with coffee. Yummy!

I made this today and it was AMAZING! There appeared to be a lot of dough and I was worried it wouldn't fit in a bread pan, so I poured it into a small cake pan (approx. 7 x 11 or so). I baked it for 30 minutes and it came out PERFECT. I'll definitely be making this again.

This bread was outstanding! Delicious and moist. I used three VERY ripe bananas and baked it for 60 minutes. I would be very careful with the amount of time you allow this bread to bake, I think it could overbake easily.

A good banana bread! I would make this recipe again. The best part is the cereal - I buy that to make another great recipe on this site (Apple Honey Breakfast Bars) but am not a huge fan of eating it as cereal - this was a great way to use most of the rest of it.

This is the best banana bread I've ever tasted! My family and I love banana bread. We have never had a recipe that makes banana bread this moist. I have to double this recipe when I make it, which is quite often, because one loaf is almost gone just a few minutes after it comes out of the oven.
