Bread Pudding
1/2
loaf (1-pound size) French bread, torn into 1-inch pieces (8 cups)

cup granulated sugar

teaspoon ground cinnamon
Dash of salt

tablespoons packed brown sugar

package (10 ounces) frozen raspberries, thawed

  • 1 Grease square pan, 9x9x2 inches. Spread bread evenly in pan. Sprinkle with raisins.
  • 2 In medium bowl, beat eggs, 1/3 cup granulated sugar, the cinnamon and salt, using fork. Stir in milk; pour over bread. Sprinkle with brown sugar. Cover tightly and refrigerate at least 2 hours but no longer than 24 hours.
  • 3 Heat oven to 325ºF. Bake uncovered 50 to 60 minutes or until golden brown.
  • 4 Meanwhile, drain raspberries, reserving 1/2 cup juice. In 2-quart saucepan, mix juice and 1 cup granulated sugar. Heat to boiling; boil 5 minutes. Stir in raspberries and cranberries; reduce heat. Simmer about 3 minutes, stirring occasionally, until cranberries are tender but do not burst. Serve with warm bread pudding.

I love bread pudding and this one is the best I have ever made. it is not only easy, it is wonderful to the taste buds. My family loves it. I make a pecan rum sauce to put over top with vanilla ice cream for a special treat. You should really try this one!!!

This is a great bread pudding recipe, I've made it several times for the office, and of course it disappeared at no time at all (heck it's the office. Then I made the mistake of making it for the family, same results. This recipe is very easy to modify, I even tried it without letting it stand in the cooler for two hours. One hint, sprinkle some extra brown sugar on top, around the corners and edges, makes a great hard rim around the top. I always add a tsp of Vanilla Extract, but for the grown-up try not using the berries instead add a tsp of Anise Extact, great with a cup of coffee after a meal.
