It's quick, easy and with hardly any left overs. We've made it everything and everyone and it's always at hit. Instead of ground beef, we use ground turkey and it's just as good as the original.

This recipe is so good!! My kids inhaled it, which says a lot since we have hit the age where vegetables on a plate given to them is a crime. Love this!! So easy & delicious. Will definitely become a regular in the menu rotation @ our house. Thanks for another great recipe Betty.

I review this as I am eating it, or inhaling it! First time I have used black-eyed peas, in anything, and I can now remember why a recipe similar to this one was a staple of my Mom''s when I was growing-up. They are so delish! I did not add anything, I did not subtract anything. A simple thought about adding an extra layer of flavor to a simple casserole by simply combining the ground beef with ground turkey(around 25%). Do not add cornstarch to this, the liquid is divine as au jus ladled over the cornbread topping! (I also have a dollop of sour cream on mine)Simple, affordable, and heavenly as all comfort food is.
