I agree with what others have said; it's a great side dish served hot. I made a few changes to mine was: I cooked off the garlic in a little oil oil before adding in the potatoes, green onions, broth, and 'cajun' seasoning. I used canned broth in the place of the granules. I also added some bacon bits.

I am giving this a high rating but NOT as a salad. As a side dish, this is amazing! When I was eating it as a salad, it just tasted odd. Once I warmed it up, the dish was good. But, I made these changes: I added freshly ground black pepper and used 6 med. red potatoes. I really hesitated putting a hot pot of water of and potatoes in the fridge--not only would it make your fridge less efficient, but also it's not good to have a hot hot pot in with cold milk, eggs, etc. The walnuts made this dish very yummy--as did the red wine vinegar. But I can't stress enough that as a salad--ick! As a warm dish--yum!!

I've had a lot of positive comments on this salad. I use the Dijon Mustard instead of the Cajun. I add a little extra and I also use the Bleu Cheese. I don't chill the potatoes in the liquid as long as suggested and I don't boil until a fork can easily be inserted either. Cool in liquid about an hour, drain and cool a little longer in refrigerator. Works out great. Thanks for the recipe!

I haven't made this yet so I can't give it a totally honest review, but just by reading the recipe I can see where there might be a lack of flavor, according to the one reviewer. I would recommend making a double or even triple batch of dressing. Instead of cooling the potatoes in the cooking liquid, pour dressing over the top while the potatoes are still warm. Toss gently, and then put in the fridge to chill. The hot potatoes are going to soak up a lot of dressing, so make more and when they're chilled, re-dress the potato salad. I'm going to try this, will review it when I do!

Potatoes were mushy, salad in general had no flavor. Dressing was incredibly bland, and I used EXTRA cajun seasoning. The only thing with any flavor was the onions (great time of year for green onions with lots of bite) and the chunks of bleu cheese. The walnuts added a bit of crunch, but didn''t really do anything for the taste. I took the salad to a cookout and ended up throwing most of it away - NO ONE liked it!!
