cups Original Bisquick® mix
1 1/2
cups powdered sugar
3/4
cup butter or margarine, softened
1
teaspoon almond extract
2
eggs
1
cup granulated sugar
  • 1 Heat oven to 400ºF. In large bowl, stir all ingredients except granulated sugar until soft dough forms.
  • 2 Shape dough into balls, about 1 inch in diameter; roll in granulated sugar to coat. On ungreased cookie sheets, place balls about 2 inches apart. Flatten balls slightly with bottom of glass.
  • 3 Bake 5 to 6 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets to cooling racks to cool. Store in airtight container.

My kids loved these because of the bright colors and they were soft. I had to experiment because I found that if I left the cookies to cool for 1 min before removing from tray that they stuck and crumbled when I tried to remove them. So I removed them from tray immediately from the oven and sprayed cooking spray on my cookie sheets. The cookies had a good flavor and were very light.

These cookies aren't bad for quick cookies. The dough is too dry, could be my climate, so for Christmas cookies I added some eggnog and spices. They were yummy! When I made them again I just added some milk. I piped on some canned frosting and added sprinkles, and my family was happy to have homemade cookies.
