Saw these on Facebook this morning. I used custard cups and half the bacon. I set the cups on a "jelly-roll" pan. No overflow from the eggs but, the pan would have caught any if there had been. They were a hit with the family. Easy and tasty!

Any ideas on how to keep a runny yolk & have the eggs over medium!

Fifemom - did you press the biscuit dough up the sides and make a big enough hole to put the egg in? And it sounds like you used a regular-sized muffin tin - maybe that was the problem. I haven't made these yet myself, just reading the reviews. It's only me and my husband here, so I don't know what I'd do with 8 of them! Maybe I can find another recipe to use the remaining biscuit dough.

I made these today!(08-26-12)Fantastic! I used a small rectangle(12ct)pan. Used big grand style biscuits, two slices of bacon and a large egg in each. Cooked in an convection oven at 350 for about 15 minutes, rotating the pan halfway through the cooking time. They came out perfect. The combination of the egg then the bacon and then the biscuit was great. No one flavor more dominate then the other. Great fusion of flavors!

I just tried these, following the recipe with no alterations, using jumbo eggs, and wonder if that was my mistake. The bacon and biscuit turned out perfectly, but the yolks were "hard boiled," while the top of the whites were still a bit translucent. Any suggestions?

These are fan-freaking-tastic, and super easy and quick to boot. I only have a cupcake pan, so I have to make mine smaller than the recipe. My process: use rolled out croissant dough instead of biscuits. It's already flat and won't puff up as much. Cut the bacon into smaller pieces before you cook it. Whisk the eggs in a bowl and portion into the cups. Mine usually take about 1/2 an egg each. Also, I pump up the oven to broil for the last minute to get the eggs cooked all the way. This takes 10-15 minutes, start to finish, once you've done it a time or two. These cupcakes are a new staple in my house! (And you can eat them on the go!)

Channel your inner Betty! I made these for a work brunch and they were such a hit I had to make more for the Board meeting 2 days later. Side note! Here are a few changes for people who do not have Jumbo muffin tin or like sunny side up eggs. For regular muffin tins cut the biscuit in half and scramble the eggs and spoon into on top of the bacon. I also used 1/2 biscuit, ground sausage, scrambled eggs. Then covered with some cream gravy before serving! The possiblities are endless!

Didn't have the jumbo muffin pan so I used custard cups, the bacon I had on hand was think cut and very large so I used one slice per cup (just cut them in half). The eggs set up perfectly at 30 minutes. Very Yummy and slightly portable.

What a mess! The only change I made was to use pre-cooked bacon bits which I pressed down into the biscuits. When I went to crack the eggs, they overflowed all over the top of my cupcake tin and all over the counter. They were just "Large" eggs too. Not sure how I am going to get them out of the tins!

These were great! My fsmily of four each had two with a smoothie and it was a great meal! I put them in for 25 minutes but the inside and outsides were already fully cooked and they were a little hard.
