This was a wonderful cake! I didn't use the cream cheese frosting, instead with what I had on hand I used a dollop of whipped cream on each slice. It was fantastic! Thanks for a healthier way to have dessert!

This is a great cake. I used 1/2 cup Splenda brown sugar instead of the reg. brown sugar. I used cranberries and walnuts instead of the raisins. Also did not frost the cake. My oven runs hot so I only baked it for 45 minutes. Everyone that had a piece raved about it and wanted the recipe.

I made this for a co-workers birthday ... he said his favorite cakes were carrot cake and applesauce cake. I could not make up my mind of which cake to bake for him until I found this recipe. Very easy to make ! Everyone enjoyed it, I had no left overs to bring home.
