Mexican Hot Chocolate Cookies
"I made these for a Mexican themed tailgate party. Thought I would have prob. finding the Mexican Hot Choc mix but found it at super store in Mexican food isle; also used margarine instead butter (since earlier comment indicated this would help make them softer). I did use the bottom of a glass to gently push down cookie (helped them cook flatter). The 2nd batch I did not roll in cin/sugar mixture I just sprinkled this on to cut down on the sweetness. Cook only 10 minutes and maybe even 9 by the time you put last try in oven. Very good cookie for a change of the usual. "

Strawberry and Cream Cupcakes
"The cake is a very pretty pink color (you notice that when you bite into it). It tasted like a vanilla cupcake to me. I couldn't taste any strawberry flavor what so ever. The strawberry pop appers to be used like food coloring vs. having an impact on taste. "

Sirloin Three-Bean Chili
"Also liked the alternative to hamburger. Instead of sirloin, I used 2lbs stew meat (you buy it already cut in chunks). Sprinkled with meat tenderizer and pounded out. This is a bit cheaper than sirloin. Instead of using the cumin and chili powder suggested I just used two 1 oz. envelopes chili seasoning. Also used few drops of tobasco sauce. Instead of beef broth, used 1 cup V8 spicy tomatoe juice. This was a good recipe that differed from the chili we had already ate so often this winter. "

"Correction to above comment: You could also double the cannellini beans (or use a can of kidney beans with the can of cannellini beans). I also use the petite diced tomatoes."

Spicy Three-Bean and Chicken Soup
"My family with teenagers liked this soup. I used about 2 lbs chicken; can of corn instead of lima beans. You could also double the cannellini beans (or use a can of kidney beans with the an o cannelline beans). Served with corn bread."

Fiesta Enchilada Bake
"I used ground beef; also to change up the texture a bit stirred into the meat a 1/2 can of kidney beans (slightly chopped). Of course used an additional cup of cheese. Received the teenagers stamp of approval!"

French Silk Pie
"This was very easy to prepare and the first desert gone at our Thanksgiving dinner. My tips: I used a store bought crust (the refrigerated dough that you unroll) rather than making my own. Also, next time I may use a little less chocolate (maybe 2 oz instead of 3), no one mentioned it, but I thought the chocolate was a bit strong. I'm not a pie baker so to me this was easy, and much cheaper than what they sale for at the chain restraunt."
