"These were fantastic!!! I am a huge fan of pineapple and coconut so these were right up my alley. The rum extract was the perfect touch to make it truely "pina colada" flavored."

"These were good. I left off the white frosting and just dusted them with lime zest which was nice but next time I think that I will use the filling and actually fill the cupcake and use the white frosting to frost the cupcake and dust with a lime zest."

"These were good but not quite lemony enough for me. I couldn't find lemon curd so I used lemon pudding which was okay. I think that I would either use a lemon cake mix or lemon frosting instead just to add that extra lemon zing that I was hoping for."

"I made this recipe as a two layer cake for a birthday party and it was a huge hit. The key with the frosting is to let it cool longer than recommended so it is thick and caramel-like. I will use this one again:)"
