Impossibly Easy BLT Pie
"This was great! A huge hit for my family. We did healthify it a bit by using turkey bacon and we swapped out the mayonaise for mustard. I think it tasted better with the mustard. Gave it a real kick. I also used a pepperjack/cheddar cheese blend instead of swiss and instead of putting this and the bacon on the bottom I put the breading on the bottom and put the others on top. That way the bacon and cheese kind of sunk into the mixture but not too much. A couple of other variations we did: I cooked the pie for 15 minutes then I took it out to add the tomato slices and some mushrooms we happened to have on hand (I wanted to use them before they went bad). Then I let it finish cooking. That way the tomatos were juicy and warm. I topped it off with the shredded lettuce! We have just enough for a left over lunch today!"

Zucchini Appetizers
"This was great. I probably only used about two cups of shredded zucchini and two eggs. I also cut back on the veggie oil a little bit. All of this took out some of the moisture. I replaced the parmesan with some sharp cheddar to give it more flavor. It was delicious. I took it to work and it was eaten up in a hurry!"

Angel Toffee Dessert
"I did do a few things different to this. I used fat free cool whip and store bought angel food cake. Then instead of heath or skore candy bars I used the heath toffee bits that you can get in the baking isle. That way I didn't have to chop it up. Then I got some separate chocolate bars and chopped that up fine. It turned out great! My husband was weary at first but the looks of it but now he can't get enough of it. And we don't feel guilty about indulging a little bit with it!"

Gluten Free Italian Hamburger Deep Dish
"I used turkey mean and instead of putting a layer of potatoes on the bottom I used maranara sauce. I also used homemade mashed red potatoes instead of the boxed kind. It was really good."

Home-Style Chicken Dinner
"This was a really great healthy meal. We left out the potatoes because we are trying to keep our carbs to minimum. But it was still delicious. I actually thing that the potatoes would have been a bit too much. I served this with whole wheat rolls and fat free honey butter instead which made it perfect."

Skillet Beef and Vegetable Stew
"I loved that it didn't taste salted down. My husband wished I had put potatoes instead of cauliflower in it but I hardly put potatoes in anything anymore. So if you are into the whole cutting the potatoes out of the diet thing cauliflower is actually a great substitute. I loved it just the way it was and am going to enjoy having the leftovers for my lunch over the next couple of snowy days."

"This was extremely delicious. We dipped it in a chinese chili sauce that we had in the fridge which enhanced all the flavors. Putting it with grilled pineapples was the perfect touch."
